Local Feature: Ict Pop-Up Urban Park

Nothing says "summertime" like eating outside! This Saturday, we ventured downtown to the ICT Pop-Up Urban Park to check out that day's food truck, and were NOT disappointed. This was B's first time (outside of the womb, anyways) and Jordan's too! I've been dying to take them here - it's such a great little spot in the middle of downtown Wichita, and the ever-changing food truck schedule makes it so fun.



I looked up the park's food truck schedule (always shown in the Facebook cover photo here) on the way down and was really excited because Kind Kravings was the food truck for brunch. Jordan and I don't eat vegan, and I totally forget every time we have this food truck how healthy it is because the options are incredible. Everything was plant-based and so delicious.
On the weekends, the park has brunch hours (10AM - 2PM) instead of normal lunch hours, so there was a breakfast and lunch menu available (scoreeee!).


B just wanted to run and play - no pictures, Mom! It's a really large area, and I felt comfortable having a toddler there. I've even brought Mali (our dog) down in the past on a leash. It's not at all cramped or too close to traffic, in my opinion. Plus there's free wifi! Nothing to hate about that.


How amazing is it that this truck was actually a double-decker bus? The guy who took our order let us know that the upstairs was air-conditioned, and we opted to eat up there just to check it out. It was really comfortable and had kind of a retro vibe. B loved peeking out the window at everyone down below!





Jordan got the Hatch Green Chile Mac n' Cheese and I got the Baked Falafel Lettuce Wrap. B shared a little with us both - she loved it all, of course. She's my little veggie lover.
